This dish adds a little crunch and a lot of iron to any plate. For those looking to replace white rice, this is a nutty and flavorful alternative. Serve it as a side with anything. It’s very filling and fulfilling.
4-6 servings
1 C Vegetable Stock
1 1/4 C Water
3/4 C Brown rice
1/4 C Red quinoa (rinsed)
1/3 C chopped dry roasted almonds
1 tsp salt
1/4 tsp garlic powder
1 TB of olive oil
1/2 C chopped broccoli
Directions:
Heat liquid to a rolling boil in a 2 qt pot. Add salt, garlic powder, olive oil to pot, then add rice, quinoa, and almonds. Reduce heat to low (between 2-4 on my stove.) Cook for 15-20 minutes or until liquid is almost gone. Add broccoli and cook for an additional 3-5 minutes. Fluff with a fork to mix in the broccoli and serve. Enjoy!
