I am not a big fan of salads; this salad is the exception to the rule. The flavors and colors form a perfect union of taste, texture and visual appeal. Don’t be fooled; however, just because this is a salad does NOT mean it is low in calorie because it is not. In fact it’s very high in calories, but it is also nutritionally dense and a really satisfying meal.
Ingredients:
Romaine lettuce washed and shredded
Quorn Garlic & Herb Chik’n Cutlet
3/4 Granny Smith apple thinly sliced
2 slices of Boar’s Head smoked gouda cheese torn into small pieces
1/3 C crushed Walnuts
Raspberry vinaigrette salad dressing
Directions:
Cook Quorn garlic & herb chik’n cutlet at 425° for 18 min. Shred lettuce. Slice apples. Add to plate. Add cheese and walnuts. Slice cooked cutlet into chunks. Add to salad and top with raspberry vinaigrette dressing. Voila!
